I didn't believe it really could; I bought it because I was ready to try anything cleaner than oil and stones - even my diamond hone could not refurbish abused blades to my satisfaction. <br /> <br />This machine fixes the problems of those ratty sharpeners on the backs of can openers, the messy and oily hones, the ineffective and tiring ceramic 'V' contraptions - and the user errors. The slots align the blade to the correct angle and keep it that way - the user just stabilizes the knife handle and keeps the blade from running through too quickly. It is that easy! <br /> <br />The stages run from coarse grit (for horribly dull blades that you used to cut branches in the garden last summer) to extra fine (to finish the edge or re-align the blade edge after use). Even my cleaver is sharp enough to cut joints instead of bludgeoning the entire beast into submission. In order to fillet a fish, a knife sharp is everything. I used the chef's choice sharpener on my fillet knives and it got them almost razor sharp. Encouraged, I went and sharpened all the kitchen knives and the box full of pocket knives that I have received for birthdays and so forth over the years. Highly recommended! 5 817 days ago my own fault... for not shopping around it is easier to take things back to a local retailer if you think something is wrong with a product. i believe the sharpener wheels are misaligned so the knives are being unevenly sharpened. it does take off metal. i'm going to do more practicing and not on my top of the line knives. <br /> 2 817 days ago Sharp knives, takes practice I've owned one for five years and my knives are razor sharp. It took me a little practice before I realized I was using it correctly, though. The directions could be better, and the machine doesn't provide any feedback to distinguish proper sharpening. _Cooks Illustrated_ magazine found that they could get knives sharper with this device than with the higher end models. 4 817 days ago works well enough This sharpener does not work with a thick blade. However, it is fantastic for your thinner bladed knifes. Steak, pocket, paring, everyday chopping knifes come out very sharp. <br />The only complaint I have is, after going thru the initial sharpening stage; using the second and third wheels result in kicking out the blade about 3/4 way thru. Similar to a table saw kicking out lumber back at you. Mine is new and has only seen use once (all of my knifes), and I don't know if there's a "breaking in" period. It'll be awhile before I use it again because it works quite well.
